Stone Oak’s Trilogy Pizza Bistro is moving ahead with limited hours effective May 11, as owner John Gladders said he is transitioning to semiretirement.
Gladders made the announcement on Trilogy’s social media channels May 8, saying he was moving ahead with semiretirement following 40 years in the restaurant business, including 20 years operating Trilogy.
Gladders said the new hours of restaurant service are 3-9 p.m. Thursday and Friday, and noon-9 p.m. Saturday. He did not say if he planned to permanently shutter Trilogy anytime soon.
Gladders expressed gratitude to the surrounding Stone Oak community for residents’ patronage.
“Why am I doing this? Because it is time. Time to slow down. Time to allow for other possibilities,” Gladders said.
Gladders also said he wanted to focus on giving back to the community by donating a portion of monthly restaurant sales to the San Antonio Food Bank.
In order to maximize the food bank donations, Gladders said Trilogy will no longer use third-party platforms such as DoorDash and Uber Eats. He instead said online orders will be processed only at Trilogy’s website.
“It is interesting to note that your order will still be delivered by a DoorDash or Uber Eats driver, but by using our platform, they will only receive the delivery fee, not 30% of the ticket,” Gladders said.
