Construction is in its final stages, with exterior stucco and roofing work scheduled to begin soon.
“We’re getting really close to the finish line and hope to open in the fall, ideally before the holidays,” said Cameron Corzine, owner of Cowboys and Cadillacs.
Corzine aims to contribute to the downtown revitalization while preserving the area’s historical character.
“We’re really trying to bring back that history of the buildings and what downtown was,” Corzine said.
The Details
The 15,000-square-foot space will feature a full stage for private events, small concerts and high-end cocktail service.
“We are after a higher-end market where we’re going to do everything fresh,” Corzine said. “Everything’s juiced in-house, and all syrups are made in-house.”
The menu will focus on organic, non-GMO options, and local vendors will play a key role in the bar’s operations, he said.
“It’s all about high-quality, locally-sourced ingredients and creating a unique, upscale experience,” Corzine said.
What’s Next
Exterior stucco and roofing are set to begin in the coming weeks, with inspections and interior finish-out to follow, Corzine said.
The bar’s social media will provide updates on the opening timeline and VIP program availability.
“We’ll be starting to sell our VIP program here pretty soon. It is limited, so it is first-come, first-serve,” Corzine said.
