Mason Mainz, owner of the Boerne Black Rifle Coffee and Apache Rifleworks, plans to open a meat market connected to the other businesses.

Mainz Meat Market is poised to have a soft opening in August and a grand opening in September, offering premium meat sourced from Texas ranches and farms, alongside a selection of local produce.

“I’ve noticed that people are becoming very protein conscious these days, and wanting to know where their meat is coming from,” Mainz said.

About the business

Mainz said the idea started as an organic grocery store, since Black Rifle Coffee sells eggs. The idea evolved into focusing on meat, with a limited selection of produce. The business will offer specialty cuts on beef, but not on pork or chicken.


Mainz said he wants to experiment with meat at the business, offering a selection of dry-aged products while pursuing aqua-aging.

“I don’t do anything simple, so I really want to try something that this community hasn’t seen,” Mainz said.
