Randy Radack, an operating manager at Mo’s Irish Pub in Vintage Park, wants people to know Mo’s is more than a typical bar.
“People see the word ‘pub,’ and they think of our competition,” Radack said. “We actually are a high-end restaurant with a scratch kitchen. We make our own hamburger patties, sauces and dressings, and everything that is fried is hand-battered to order.”
Radack said Mo’s serves traditional Irish fare, such as shepherd’s pie, Irish stew and corned beef, as well as an array of burgers, sandwiches and salads. He said two of the most popular entrees are the triple grilled-cheese sandwich with oven-roasted-tomato soup and the Mo’s burger, which is layered with corned beef, Swiss cheese, a creamy sauce and other toppings.
The restaurant also has between 130 and 140 different types of beer—many of which are local—as well as 45 TVs and a spacious patio with live entertainment on the weekends.
Mo’s Irish Pub is a small chain that was founded in Milwaukee in 2003 by Johnny Vassallo. The Vintage Park location, which opened in 2015, was the fourth restaurant in the chain, and Radack was its first employee.
“I’m a hometown kid—I went to Cy-Creek [High School], so it’s right in the middle of where I grew up,” Radack said. “I see a lot of people that I grew up with, a lot of parents of the kids I went to school with and a lot of my parent’s friends.”
Radack said Mo’s prides itself on its food, service and atmosphere, which he described as an Irish pub with bricks and vaulted ceilings. The decor differs from other Mo’s restaurants in that it reflects the aesthetic of its location in Vintage Park. He said the staff strives to create an environment where customers of all ages can feel welcome and have fun.
He said his Mo’s location is doing so well that the company decided to continue expanding in Texas. A Mo’s restaurant opened in Cypress last year, and one just opened in Katy in May.
