
A grand opening for Kimy's Kitchen is set for April 1.[/caption]

Cypress resident Kimberly Fuentes is planning to open a new food truck, Kimy's Kitchen, at the H-E-B at Barker Cypress Road and Hwy. 290. Fuentes said she is targeting April 1 for her opening day with an opening event that will include a buy two get one free deal on tacos
Fuentes said her food truck will be open for breakfast, lunch and dinner but will specialize in freshly made breakfast tacos. Tacos will be made with homemade corn and flour tortillas, she said.
"I used to commute to Rice Village every day and would have to leave very early in the morning, and I noticed there were not many places I could stop to get something fast but also fresh," Fuentes said. "I think it's something our area needed."
Fuentes said she also plans to offer quesadillas, beef fajita and beef guisado plates, and gorditas, a Mexican pastry made with cheese, meat and other fillings.
