Joe Duong, owner of popular restaurant The Shack Burger Resort, is working on his latest venture in Cy-Fair, a new concept centered around grilled cheese sandwiches. MELT Gourmet Grilled Cheese, set to open in early June at 14030 Telge Road, Cypress, will offer diners a variety of gourmet grilled cheese sandwiches with bread freshly baked from Houston-based Slow Dough Bread Co.

The final menu is still being tweaked, Duong said. Once the restaurant opens, diners can order all kinds of cheesy sandwiches with specialty items inside, such as barbecue brisket or macaroni n’ cheese.

“You can’t go wrong with mac n’ cheese and grilled cheese,” Duong said. “We are trying to open as fast as we can.”

Construction is complete, and the restaurant will open to the public once the permitting process is finalized, Duong said.713-367-5177
