New restaurants and bakeries are making their way into the Katy area. A Proud Pie bakery will open Nov. 2 at 3522 S. Mason Road, Ste. 300 in Katy. “It’s all about coffee, pie, love,” owner Scott Chapman said. The shop will have 12 kinds of pie made with no preservatives and all-butter crusts, Chapman said. Flavors include key lime, pecan, peach and apple. The pies are baked on a three-day rotation and have a four-day shelf life, so pies that don’t sell will be donated to charitable organizations. In addition to pie, the shop will offer tea and coffee that will be brewed within 36 to 72 hours of its roasting date. The eatery will also offer pie-flavored blended beverages, breakfast sandwiches and quiche in the morning, as well as sandwiches at lunch. The restaurant serves New York-style pizza and Italian meals in a cozy, family-friendly atmosphere. The local chain also has locations in Tomball and Richmond.
