In the pursuit of the purest local product, Round Rock Honey uses honey bees that collect nectar from more than 90 different sites in Central Texas.

The Round Rock Honey Beekeeping Academy is now offering a chance for others to suit up and experience the processes behind their honey production with beekeeping classes.

Konrad Bouffard, a master beekeeper and former teacher, founded the Round Rock Beekeeping Academy in 2007.

Each beekeeping class is taught by a master beekeeper who is an expert in beekeeping. The class includes a lecture on the fundamentals of beekeeping, as well as a hands on instruction where students can extract and taste honey from the hive.

"The class is structured for three hours," beekeeping instructor Ailon Gamboa said. "In the first [hour], I talk about basics of the bees, the biology and the parts of the hive and then we suit up, and show [students] everything we've just talked about. That part is my favorite."

After the class, students will have all of the skills and information necessary to begin their own hive, Bamboa said.

While the class is family oriented, participants must be at least 7 years old. Bee suits and the necessary equipment are provided. Each class is held at 1308 Chisholm Trail, Ste. 107, in Round Rock. Classes are $125 and are offered year round.
