Belly of the Beast, a casual lunch eatery, will open in Old Town Spring at 26510 Border St., Spring, in October. The new American, chef-driven concept will offer counter service with dishes including Baja fish tacos, smoked short rib with a fig mole and roasted winter squash massaman curry.
