Officials with the Howard Hughes Corp., the development group behind the Bridgeland master-planned community, announced March 19 that Edelweiss Stube is expected to open by the end of the month in the Lakeland Village Center, 10611 Fry Road, Cypress. Edelweiss, named after the national Swiss flower, was founded by two Cypress families and will be run by Markus Klauser, a Switzerland native, and William Payne. The eatery's hallmark dish will be raclette, a wheel of Alpine cheese that is heated and scrapped onto diners' plates to eat with meats, pastas or vegetables. Other menu items will include Alplermagronen—a traditional Swiss penne pasta with potato cubes served in a creamy cheese sauce and topped with onion crisps—and Zurich Geschnetzeltes mit Rosti—tender bits of beef and mushroom in house-made gravy, served with shredded, roasted potatoes. “The Swiss see dining as an experiential coming together of family and friends," Klauser said. "Through collective, sharable dishes like raclette, that experience of actually enjoying a meal is amplified.” Once open, the hours at Edelweiss will be 11 a.m.-10 p.m. from Tuesdays through Thursdays and 11 a.m.-11 p.m. from Fridays through Sundays.
