Fajita Pete's opened Jan. 20 at 6144 Sienna Ranch Road, Ste. 700, Missouri City, with abbreviated hours from 4-8:30 p.m. and with a limited menu of fajita platters and quesadillas. The Tex-Mex restaurant plans to expand to its regular hours beginning Monday, opening 11 a.m. to 8:30 p.m. Sunday through Thursday and 11 a.m. to 9 p.m. Friday through Saturday, according to staff.
