Pokey O's Cookies & Ice Cream will open the first of December in Parker Square at 330 Parker Square, Flower Mound.

The business will sell cookie cakes, cookies and ice cream, as well as the Pokey O Ice Cream Sandwich, which is a scoop of Blue Bell Ice Cream sandwiched between two cookies.
