Lewisville’s Prohibition Chicken takes two things very seriously: cooking quality chicken from scratch and making the best old-fashioned cocktail in the Dallas-Fort Worth area. When Josh Babb and his partners opened Prohibition Chicken a year ago in Old Town Lewisville, he said their original intent was to provide the community with family-style dining—similar to Babe’s Chicken Dinner House—something that cannot be found at other Lewisville establishments. The owners later realized locals wanted cheaper options, a la carte dishes and individual entrees, so they rolled back their commitment to family-style dining and instead began offering affordable dishes ranging from the Nashville Hot Chicken to onion rings. The restaurant also serves fresh biscuits that are baked in the middle of the restaurant. Babb said the idea for the restaurant was birthed during a night of whiskey drinking shared with his partners. “We started talking about craft cocktails, and we said, ‘what if we had craft cocktails that were prohibition-era craft cocktails?’” Babb said. “We were like, ‘that’s great, but if we’re going to have that, we’ve got to have a speakeasy.” And for customers looking for a true prohibition-era experience, a quick phone call made from a payphone booth in the back of the restaurant provides access to a speakeasy decorated with old photographs of Lewisville. The restaurant is a fan favorite frequented by Hunter Unkefer, a local salesman who said he and his wife return to experience the good drinks and the “awesome” environment. Unkefer prefers the banana old fashioned but said he also enjoys trying the bartender’s experimental creations. Prohibition also offers a happy hour Tuesday through Friday from 4-6 p.m., during which Texas beers are $5. Babb also owns Musume, a sushi restaurant in downtown Dallas, Shooters in Victory Park, Chop Shop Live in Roanoke and Chop Shop Carrollton. He and his partners—Sean Clavir and Roger Kaplan—have decades of combined experience. Kaplan, Babb said, brings big restaurant experience to Prohibition Chicken. Clavir and Babb, meanwhile, have been friends for 12 years. He said his goal in food service is to offer unique flavors that “jump off the plate.” At Prohibition Chicken, those include sides like Elsie’s Potato Salad, grits, mashed potatoes with parsnips and macaroni with cheese.
