Catering to a clientele who largely follow strict diets, the chipotle bean burger at Pure Healthy Eatery is a popular option for vegetarians, owner Fernando Cordova said.
Originally from Mexico City, Cordova and his business partners bought the original Pure Healthy Eatery
location on Research Forest Drive in 2013. A second location was opened on Sawdust Road in 2015.
The chipotle bean burger is made with red, pinto and black beans, topped with avocado, alfalfa sprouts, cucumber, romaine lettuce, tomatoes and housemade vegan mayonnaise on a whole wheat bun. The burger sells for $11 and is also available as a wrap.
“Nowadays, people are becoming more conscious about what they put into their bodies, so we wanted to give healthier options to people,” Cordova said. “When people eat here, they just feel better.”
The eatery also offers soups, salads, fresh-squeezed juices and smoothies.
