The third dining option to become a part of the Fielding’s restaurant group owned by Cary Attar, Fielding’s Rooster opened in mid-August in The Woodlands.

Attar said Fielding’s Rooster takes on a different menu and theme than his other two restaurants in The Woodlands: Fielding’s Wood Grill and Fielding’s Local Kitchen+Bar. Fielding’s Rooster offers a menu full of chicken plates and dishes, with no beef, fish or pork dishes included on the menu.

“We have other restaurants in The Woodlands, but we had no chicken concept so far,” Attar said. “We’re not a fried-chicken restaurant, but we have two types of fried chicken that are amazing. We’ve been growing these chickens in Indiana. They are Rock Cornish hens—they are never medicated and pasture-raised. It’s as clean as you get.”

Attar said since opening three months ago, the restaurant and chicken-centered dishes have seen a good response from the community, and business continues to grow.

Popular dishes among customers include the rotisserie chicken, the Tennessee red fried chicken and the butter chicken plate, Attar said.

“[Fielding’s] Wood Grill’s rotisserie chicken was the genesis for this concept here,” he said. “This is a completely unique offering. And like our other two restaurants, we make our own bread, gelato, mayo and sauces, and butcher our own meat. We are a real restaurant.”

Attar said Fielding’s Rooster also serves a wide range of handcrafted cocktails, cocktail pitchers, coffee and tea cocktails as well as a selection of wine and beer on tap.

“In all of our restaurants we have full bars,” he said. “We have a comprehensive offering of every kind of spirit and have a creative wine list. Our frozen cocktails are amazing, like the South Side Slushie and the Frozen Calypso.”

Aside from lunch and dinner, Attar said a brunch menu is also served at the restaurant on Saturdays and Sundays and offers options such as the crumpet Benedict, the Dutch pancake and the chicken and cornbread waffle dish. Unique mimosas and bloody marys are also served at brunch.

“Our brunch is also very chicken specific,” he said. “We also have really cool bloody mary drinks—they are amazing—along with a frozen screwdriver and peach mango bellini drink.”

Attar said The Woodlands remains a great place for restaurants because residents like to take advantage of a healthy and approachable menu like Fielding’s Rooster.

“We love The Woodlands, and we think it’s a great, competitive market,” he said.” We think there is general warmth and opportunity for independence, and we try to make each concept very approachable. If you give people a healthy, approachable menu item at a reasonable cost, they go for it.”

Attar said he hopes the Fielding’s restaurant group can continue to grow and expand in the future while still maintaining the same service and menu quality.

“We absolutely want to grow safely and correctly,” Attar said. “We want to grow with the support of the community and if it makes sense. We’d love to take Fielding’s Wood Grill to [Houston]. We also we want to be in our restaurants every day and as often as we can since we are a very hands-on operation.”
