
Schilleci’s New Orleans Kitchen specializes in Cajun, Creole and seafood dishes. However, a popular menu item at the French Quarter-inspired restaurant are the sweet potato fries ($9).
“We get a couple of people that order them for an appetizer, but most of the times, [customers] substitute them out for french fries,” Schilleci’s executive chef David Brittain said.
The fries are dusted with raw sugar and Saigon cinnamon, which comes from evergreen-type trees, and then served with a side of local honey, Brittain said.
“We get a precut waffle fry,” Brittain said. “It’s all-natural. It doesn’t have any chemicals—that’s one of our big deals. We try to make everything we can from scratch.”
Brittain, who has been the executive chef at Schilleci’s in Market Street for seven years, said he makes sure all dishes at the restaurant maintain the New Orleans style.
