Thai Tom Yum Soup Hubbell & Hudson Bistro[/caption]

Executive Chef Austin Simmons spent his honeymoon in Singapore in 2016 and returned to his job at Hubbell & Hudson Bistro in The Woodlands with Asian inspiration.


The Thai Tom Yum Soup ($10) is Simmons’ take on a Thai tradition. The gluten-free dish is made with ginger, lemon grass, garlic, kaffir lime leaves, tomato product, chicken stock, coconut milk and sake.


The broth is poured tableside over tender carrots, fennel, onion, half cherry tomatoes, shitake mushrooms, scallions, cilantro, mint and shrimp mousse.


“Not everyone knows what tom yum is but once they have it, they love it,” Simmons said. “It’s healthier than a cream-based soup, and it’s packed with flavor. It’s spicy enough that it hits you in the back of the throat, but it cools down and makes you want more.”
