Although Moises Ayala opened Moyz Street Food on Richard Road in May, it is not the first time he has been involved in the restaurant business.

Ayala has been working with food trucks since he was 18 years old, and he began operating his first food truck in 2003.

“We used to be outside of bars downtown and then moved more north, toward Rayford Road,” Ayala said. “My cousin and I then got together—he makes burgers, and I make Mexican food.”

The fusion of burgers and Tex-Mex food is the foundation of Moyz Street Food, which consists of one food truck that drives around to different sites around the Benders Landing area and the new restaurant on Richard Road.

“Our food is very organic,” Ayala said. “We’re close to a school so a lot of our customers are kids, so it drove us to change to organic vegetables. We also use high-quality products like inside beef skirt, pork loin and chicken breasts.”

Ayala said he gets to work with his family while doing what he loves.

“I feel so happy right now,” he said. “I work with my cousin [Adrian Diaz] and his wife, who also bakes for us. The whole family is together. I’m at home in the kitchen.”

Ayala said costras, which are similar to quesadillas and cost $3.99, are a popular customer favorite. The costra consists of a tortilla with beans and meat that is then covered with cheese and grilled. Garnish is then added on top.

“Another popular item is our burgers, and the recipe is from my cousin,” Ayala said. “We have a cream-cheese stuffed patty that is so good. We also have a family friend who owns a bakery who makes our own recipe of fresh bread. Our mayo is also crafted every day.”

Aside from offering burgers and Tex-Mex specialties, homemade baked goods, such as cupcakes and cookies, are offered as well as catering opportunities for birthdays and weddings.

Ayala said the new restaurant has seen a positive response. He and his family are planning on adding another food truck to the restaurant or a second location in the future.

“Our combination of Tex-Mex and American are what we call street food,” he said. “Everyone in the community has been welcoming. I’m living my dream.”
