At Casa Vaqueros in Missouri City, there are nearly as many different flavors of margaritas as there are entrees on the menu. The remodeled Tex-Mex restaurant serves a traditional margarita but, in addition, it features margaritas in a rainbow of flavors from mango to watermelon. One of the most unique flavors is the sour apple margarita for $5.50. There is also a sangria margarita for $5.50, which is a traditional margarita with the sweet fruit wine added to it.

Casa Vaqueros has been around for at least 10 years, Manager Noemi Valdez said. The business was purchased five years ago by current owner Miguel Bedolla, who remodeled the interior and revamped the menu.

“We remodeled everything from the floors to the restroom,” Valdez said.

Bedolla added healthy options to the menu, such as additional salad and fish choices, Valdez said. He also began using better quality, fresher ingredients.

One of the house specialties is the pechuga del mar, which is chicken and baby shrimp sauteed in a heavy cream sauce with Parmesan cheese.

Its charro beans consist of bacon that is cut in pieces that are just the right size, and the juice is not greasy, a common pitfall that trips up so many who cook up the staple. Another specialty is the quail plate for $15.99, which is flash-fried and seasoned quail that is then sauteed with onions and bell peppers.

Valdez said her favorite item on the menu is the fajitas cooked in a chipotle sauce, for $25.99 with chicken or $28.25 for beef. Both serve two. “The meat is really tender,” she said.

On Cinco de Mayo, Casa Vaqueros has an all-day happy hour and a mariachi band.
