He joined the Sugar Land eatery in May 2023, he said, bringing his own classic Italian recipes to the menu. The eatery, which opened in November 2022, is a concept from Texas-based Berg Hospitality Group.

What sets B.B. Italia apart from other Sugar Land restaurants is the New York-style Italian dining atmosphere and Amato’s commitment to serving authentic ingredients, he said.
“I want customers to have the ‘wow experience,’ something that you will not find in some other Italian restaurant,” Amato said. “I am an Italian chef, so I want that quality of the ingredients—100% parmigiano, 100% prosciutto, fresh Italian sausage, arborio rice—all from Italy.”Respecting the craft
Amato’s more than 40 years of restaurant experience has taken him from Italy to Las Vegas and Los Angeles and finally to Sugar Land.
He said he inherited a love for food and cooking from his mother preparing food for their family and his grandfather, who would make his own olive oil, white wine and tomato sauce from scratch.
“It’s about family, the food is what brings [us] together,” Amato said. “Sugar Land is more family-oriented. I like it, because it reminds me of my own family, my own town.”From the oven
Amato said he loves to make B.B. Italia’s 20-layer lasagna and a new creation—his multicolored almond cake dessert with raspberry-infused simple syrup. But he said he considers every dish on the menu a “signature item.”From arancini, which is a fried risotto ball stuffed with cheese, to the oven-baked pizzas, meatballs, carpaccio and chicken parmesan, each dish gives him the opportunity to showcase his abilities, he said.
