House of Roux plans to open in Old Town Spring in late April. Located at 317 Gentry St., Spring, the new cafe will offer traditional Cajun cuisine for lunch and dinner with menu items ranging from boudin to gumbo pie—a House of Roux original. Owned by Abbey Hebert and Cody Nicholson, House of Roux's dishes are inspired by the flavors found in Hebert's hometown—a small town located in Louisiana's Acadia Parish. www.houseofroux.com
