The Gleannloch area—known for its golf course—is now also home to Caddy Shack, a golf-themed bistro.

Owner Austin Schuring has a unique background from his upbringing in Spring to traveling the world due to his parents' careers as pilots. Schuring said his diverse resume—which encompassed his time as a band member and a painter—eventually led him to discover a profound passion for serving people, drawing him to the restaurant scene.

Before establishing Caddy Shack, Schuring said he honed his skills at other eateries such as PF Changs and Bimbos. Determined to realize his dream of owning his own business, Schuring successfully opened his first venture, The Farm Drinkery, located on Champion Forest Drive in Spring.

Nine years later, Schuring embarked on his next venture with the opening of Caddy Shack Bistro in May 2021.

"The Farm Drinkery is where you take the boys, and Caddy Shack is where you take your date,” Schuring said.


Inspired by the golf-centric demographic of the Gleannloch area, the name "Caddy Shack" pays homage to the community it serves. Schuring's admiration for movies like "Happy Gilmore" and "Caddyshack" is evident in the restaurant's themes and ambiance. However, Schuring's paramount goal is to treat the patrons of Caddy Shack like family, he said.

Apart from offering a range of craft cocktails, fine wines and local brews, Caddy Shack's menu is inspired by the legendary Anthony Bourdain. Schuring, an avid fan of Bourdain, acknowledges the influence the late chef has had on his culinary journey. He emphasizes the importance of pairing excellent drinks with delectable food, as he believes that both elements contribute to an unforgettable dining experience.

Schuring said he prefers a hands-on approach when it comes to running a restaurant, which he noted instills a genuine connection with patrons.

"I want to be cooking the food, I want to be serving the drinks, I want to know everyone's names,” he said.


Among the many food options at Caddy Shack, Schuring said his personal favorite is the Happy Gilmore—wagyu beef sliders paired with thin-cut fries. The crowd favorite, according to Schuring, is Grandma's Eggrolls, which Schuring noted is a secret recipe.

Reflecting on his journey, Schuring said he finds great contentment in his work, yet remains focused on progression.

"The whole point is to keep on going,” Schuring said, referencing Bourdain.
