Three friends formed DeNovo Coffee in 2015 to bring its drive-thru style—known more widely in the Pacific Northwest—to the Greater Houston area.

“We really like the North Houston area,” co-owner John Hibler said. “The population is full of good people that work hard and benefit from a concept like ours.”

General Manager Norma Jean Odegard, a Seattle native, said drive-thru coffee shops have been popular on the West Coast. The store’s owners—Caleb Tommasini, who is from Oregon, and Hibler and Jake Vandermeer, who are from Texas—thought an independent drive-thru with unique flavor combinations would catch on in Spring and Klein, Odegard said.

In additional to its hot and cold traditional espresso-based beverages and Italian sodas, the shop has an unofficial menu of about 50 additional flavor combinations, Odegard said.

DeNovo’s coffee is roasted locally.

“It has a lot of body,” Hibler said of the current blend. “It’s smooth, not bitter, and a little on the darker side.”

DeNovo also offers energy drinks, smoothies, chocolate-based mocha beverages and breve drinks, which contain half-and-half creamer.

Pastries, including donuts and kolaches, are available at the shop through partnerships with bakers such as Top Donuts on Louetta Road.

DeNovo opened a second location in Tomball in December, and Odegard said the owners would like to add more locations in the future.

“DeNovo is like a big family, and everyone takes care of each other,” said barista Tara O’Neel, also a Seattle native. “This is the best atmosphere I’ve ever worked in. And you get to drink coffee all day.”
