Houston restaurateur Michael Collins will open two new restaurants in Generation Park's mixed-use district Redemption Square in spring 2019, McCord Development officials announced Thursday. Collins—who owns several restaurants within the city of Houston's inner loop, including The Fish in Midtown—will open Wholesome Kitchen and Wholesome Pies at 250 Assay St. in Northeast Houston, under his new venture, Wholesome Restaurant Group. According to a press release, Wholesome Kitchen will feature an all-organic menu that changes seasonally with menu options, including salmon, red snapper, steak, appetizers and salads. Meanwhile, Wholesome Pies will serve made-to-order thin crust pizzas with an offering of seasonal and organic toppings. The two restaurants will share a large outdoor patio and a 7,677-square-foot indoor space that will be divided by a sliding wall, according to a press release. Wholesome Kitchen will have seating for up to 180 guests, while Wholesome Pies will have seating for up to 80 diners. In a statement, Collins said the two restaurants will be the first concepts he has opened outside of Loop 610. “There is such massive growth in the Lake Houston area and Generation Park is the development at the forefront," Collins said. "We want to be a part of that expansion by providing unique restaurants, in a comfortable environment, while serving quality food and beverages made with the best ingredients available.” Redemption Square is a 52-acre mixed-use district within the 4,000-acre, master-planned development Generation Park. Earlier this year, Bibo's Bistro and Bar was the first restaurant to open within Redemption Square.
