Project Pollo, a plant-based, fast-food restaurant, opened its first Houston-area location at 514 Mason Road, Katy, on July 28. The “chicken-less chicken” concept is the eighth Texas location opened this year. Project Pollo’s business model is designed to support sustainability and fair wages, prioritizing people over profit, company officials said in a July press release. All of Project Pollo’s food is made from scratch. The restaurant’s specialty is its proprietary vegan chicken made using a non-GMO soy patty and all-natural spices.
