Throughout 2025, Community Impact spoke with owners and managers of six local restaurants to be featured in our monthly editions. Here’s a look back at the Katy and Fulshear eateries we featured.

1. Philly Flats offers wings, 'authentic' cheesesteaks in Katy

It means something for Scott Boyer, owner of Philly Flats in Katy, to offer “authentic” Philly cheesesteaks. Originally from Reading, Pennsylvania, Boyer moved to Katy in the early 2010s. Boyer opened his food truck, Quaker Steaks, in 2017 because he said he couldn’t find any cheesesteaks in the Houston area that reminded him of home.

The cheesesteaks at Philly Flats have provolone cheese, either ribeye steak or chicken breast, and a choice of onions, sweet or hot peppers, and mushrooms. But Philly Flats pays equal attention to its wings, Boyer said.2. Katy's Fusion Grill & Bar aims to offer best burger in Houston

Even as Fusion Grill & Bar continues to expand, owner Adonys Montiel remains true to his original vision of having the best burger in Houston.


The Katy eatery started out as a food truck in 2016 focusing exclusively on burgers and fries. In April 2017, Montiel opened his brick and mortar on Mason Road for counter service dining; the restaurant transitioned into a casual dining space with booth seating, a full bar and intimate lighting in November 2023, he said.

3. Roegels Barbecue Co. serves 'old-school' Texas barbecue in Katy

Russell Roegels has been in the barbecue game since he was 15 years old. His experience and hard work culminated in a restaurant franchise with his own name—Roegels Barbecue Co. The barbecue joint has two locations, a flagship on Voss Road in Houston and a location in Katy that opened in February 2022.

Roegels said he tries to keep the menu interesting while utilizing quality ingredients with items such as smoked turkey katsu sandwiches; bologna, mortadella and sausages made in-house; two-meat combo plates; brisket mac and cheese; and Frito pies.4. Dos Tacos provides authentic street tacos to fund cancer research


Being diagnosed with hurthle cell carcinoma, a rare thyroid cancer, didn’t stop Omar Aceves from achieving his dream to open a taco shop but instead fueled his passion to give back to the community.

Aceves opened Dos Tacos in April 2024 fulfilling his dream of owning a restaurant focused on providing authentic street cuisine and customer service. The menu features various taco specialties including a 50-year-old family carnitas recipe, Aceves said. Other fan favorite tacos include chorizo, pastor and fish.5. Local Table brings fresh, family-friendly dining experience to Katy

Local Table opened its first location in Katy with just 30 employees. Now, the family-owned restaurant has over 400 employees, five locations and plans to keep expanding.

Local Table offers a variety of dishes ranging from burgers, sandwiches and pizza to seafood, tacos and plant-based rice bowls. The restaurant also offers a separate brunch menu on Saturdays and Sundays, with menu items such as crab cakes eggs benedict, chicken and waffles, omelets and smoked salmon avocado toast.6. Ferso’s Mexican Cuisine brings authentic cuisine to the Katy-Fulshear area


With clean ingredients and family recipes, Rosaura and Fernando Garduno have served freshly made Mexican cuisine to the Katy and Fulshear area since 2019.

The couple grew up in different parts of Mexico but moved to the Houston area in 2012, knowing they wanted to bring something different than Tex-Mex and fajitas to the restaurant scene. The menu is inspired by local dishes made from different parts of Mexico, bringing diverse tastes from different cities across the country.
