Located in the Heights, Verdegreens co-owner Billy Trainor said the team will open a restaurant called Farmstand and a bar named after one of his late aunt's sayings—Good God, Nadine's.
"The intent when we started the farm in 2016 was to start a restaurant," Trainor said. "I'm a restaurateur, my partner is a chef. We're not ones to do anything halfway, so we're opening two [concepts] in the same location."The space where the restaurant and bar will open are in the locations of Chatters Cafe and Bistro and Darwin's Pub, respectively.
Kyle Wiebe, who makes up the other half of Verdegreens ownership, is working to develop a menu for the upcoming restaurant, Trainor said.
The background
Verdegreens formerly operated out of La Grange, a Houston restaurant that closed in January. Trainor said the team developed its Farmstand salad dressings here, which won first prize in the 2023 H-E-B Quest for Texas Best awards.Verdegreens specializes in hydroponic vegetable farming, growing lettuce and leafy greens without pesticides, herbicides and fungicides for the Houston community, according to its website.
The brand sells a variety of FarmBoxes made with living lettuce, greens, mushrooms and a selection of organic and sustainable produce.
