Cabo Bob’s, an Austin-based burrito restaurant with a seafood twist, is expanding its presence in Houston with three new eateries. The theme of each restaurant is based on different surfing hotspots, and the food reflects the taste of Cabo.

“You have a lot of surfers here [in Houston], and they get it, they get the fish tacos,” Cabo Bob’s owner Don Brinkman said.

Inspired by the food of coastal California and the surfer mentality, Brinkman opened the original Cabo Bob’s in Austin with his wife, Terri Brinkman, in 2008. The eatery serves burritos, salads, bowls and fish tacos.

To expand into Houston, Brinkman licensed to local franchisee Bob Hauser to choose the best location and run the establishment. The first Houston location at 1810 Fountain View Drive, which opened late 2019, is already popular with the locals, Brinkman said.

Based on this success, Brinkman said Houston was the best place to expand because of how welcoming the multicultural population is.



“That’s the beauty of Houston; it’s one of the most diverse cities in the U.S.,” he said.

The three new Houston locations are on course to open summer 2022, Brinkman said. They will be located at 7103 Cutten Road, Houston, in the Willowbrook Mall; 740 Mason Road, Katy; and in Meadows Place at 11940 Southwest Freeway.

Each location is inspired by a different surf spot in Cabo. The ones coming to Houston will be based off the surf spots called Monuments, Bahia Magdalena and Old Man's, he said.
