After spending more than four decades perfecting the art of barbecuing, Jim McCune—alongside his children Josh and Michelle—opened Moonlight Bar-B-Q Company off Budde Road in July. The barbecue joint’s most popular item is its brisket ($17.95 per pound) which is smoked overnight and can be served sliced, chopped, in a sandwich or on top of a baked potato. “Every brisket is different because they’re all differently marbled and have different weights, so you really have to watch it and know what you’re doing to get a quality product,” Michelle said. The eatery also offers smoked and jalapeno sausage, turkey and chicken breasts, pork spare ribs and salads. Made-from-scratch sides include Mexican street corn casserole, spicy pinto beans, macaroni and cheese, potato salad and coleslaw, while featured homemade desserts include banana pudding, Big Mama’s Buttermilk Pie, Texas Bourbon Peach Pecan Pie and blueberry banana pie.
