Made with spicy king crab, avocado, spicy mayo, chili powder and cucumber and topped with a slice of fresh salmon and a layer of mango, the Mr. Mango Roll at Happy Garden blends spicy and sweet flavors into a treat that is refreshing without being overly sweet or sour, owner Michael Chen said.


Chen said he got inspiration for the roll from a sushi restaurant in New York City, but he made several changes to produce the version he serves at his restaurant. He uses soy paper, which he said is less chewy than the traditional seaweed paper. The roll is topped with a homemade mango sauce, which gives it a richer flavor, he said.


“There are lots of ingredients that go into it—fresh cut mango, different kinds of sakis,” Chen said. “It’s a sauce made exclusively for Mr. Mango. We don’t use it for anything else.”


The Mr. Mango Roll, sold as an eight-piece dish for $13.95, is one of several specialty sushi rolls at Happy Garden.


Other specialty rolls include the Hawaii Roll—made with spicy shrimp, cucumber, asparagus and crab maki—and the American Dream Roll—made with shrimp, king crab, seaweed salad, eel, avocado, eel sauce, spicy mayo and honey wasabi.
