So when Sammour set out to open Coles Crossing Breakfast House at the end of July, he sampled countless coffees and invested in a high quality juicer.
“Nothing comes close to the taste of fresh-squeezed orange juice,” Sammour said. “We go through two to three cases of oranges a day, and it’s worth every penny.”
Sammour said he has been in the restaurant industry for 35 years, starting out as a food and beverage director for Holiday Inn and going on to manage Denny’s, T.G.I. Friday’s and Applebee’s.
After taking chef courses, Sammour was able to design his own menu with all original recipes for his two breakfast houses: The new one in Coles Crossing and Lakes on Eldridge Breakfast House.
Coles Crossing Breakfast House serves oven-baked omelets, skillets, benedicts, French toast, crepes and specialty pancakes. An extensive lunch menu offers soups, salads, sandwiches, burgers, chicken fried steak and fajitas.
Sammour said quality gourmet breakfast is a need in Cypress.
“Never mind the IHOP and the Denny’s—this is not our competition,” he said. “This area is growing, and it’s growing big. Business is doing very well in this area, and I thought we had something good to offer.”
Sammour said the restaurant does not carry margarine or oil of any kind; he spends nearly $800 a week on 100 percent real butter. Customers can tell when ingredients are fresh and when they are from a can, he said, so investing a little more money makes all the difference.
“People have so many choices these days so you have to give them not only good food, but the customer service to complement that,” Sammour said. “We try to make it right the first time, and if it’s not, we always listen and do whatever it takes.”
