Joel Castellanos plans to open Cafe ZunZun’s coffee roastery in February at 12716 Telge Road, Cypress, and the facility’s coffeehouse should open to the public in March, he said.

The shop will serve specialty coffee-based drinks, teas, light snacks and pastries. Coffee is roasted locally but sourced from small independent farms all around the world.

Castellanos said he has designed the business with sustainability in mind, focusing on organic products and providing farmers and their families a better quality of life while protecting the environment.

“Our name, ZunZun, comes from the Cuban name of the smallest hummingbird on earth, considered by the early inhabitants of Cuba as the ‘pollinator of life’ and part of the ecosystem that provides shade to the coffee plants so they can grow organically in their natural habitat,” he said. “This tiny bird, the size of a bee, is our symbol to protect the migratory birds and bees species, endangered by deforestation and industrial agricultural practices.”
