After spending two decades tossing dough and perfecting pizzas at a locally owned shop in Houston, Luis Hernandez turned a lifelong dream into reality in 2015 by opening his own pizzeria in Magnolia. Ten years later, his family-operated business has grown to six locations across the region.

“This is all I have ever done in my life. I worked at a pizzeria for 20 years—and it was a small family place—and then 10 years later, it didn't feel like work anymore. It became a passion,” Hernandez said.

Staying local

Hernandez, a Cypress resident for over a decade, said his journey started 20 years ago as a dishwasher. From there, he moved up as a delivery driver, cook, kitchen manager and store manager, and eventually ventured off on his own.

After operating Pizzaiolo's in Magnolia for a year, he expanded his business to Brenham in 2016 and opened a second Magnolia location in 2019. Then, Pizzaiolo's expanded to Cypress and Tomball in 2023 and to Spring in April. The Tomball and both Magnolia locations have indoor playgrounds for children, while the newest location in Spring boasts wooden tables crafted by the Hernandez family.

His wife Miriam Hernandez, daughter Carla Barrios, brothers and nephews carry on the family legacy by helping him manage each Pizzaiolo's location.

At Pizzaiolo's, customers can find gourmet pizzas made with wheat flour, extra virgin olive oil, vegetable oil and Bacio cheese—a premium cheese made with cow's milk along with a "kiss of buffalo milk," Hernandez said.

Pizzas are made to order with fresh dough prepared daily and topped with fresh vegetables and ingredients sourced locally. The pizzeria offers meats such as pepperoni, sausage, bacon, beef, chicken and shrimp.

Customers can customize their own pizza or select from 18 gourmet pizzas, including gluten-free options. Hernandez said a customer favorite is the chicken and bacon pizza made with alfredo sauce, chicken, bacon, mozzarella and fresh spinach.

The eatery also offers a daily all-you-can-eat buffet from 11 a.m.-2 p.m. for $10.99 and serves its community by participating in spirit nights to support local schools.
