Montgomery residents Sergio and Solaida Nuñez opened a brick and mortar for their former catering business in Montgomery on Feb. 4, 2023. Established as Porky’s Belly BBQ, the business was an expansion to their catering business.

“You have to have a passion to continue to make whatever you desire in the industry, and barbecue is just a passion of loving to cook to me,” co-owner Solaida Nuñez said.

The setup

Husband and wife Sergio and Solaida Nuñez said that as an engineer and full-time nurse, respectively, they did not expect to become business owners.


However, when the couple began a small catering business in 2008 with a smoker on wheels and barbecue as their focus, a clientele was established and expanded over the years.

Solaida Nuñez said the catering business served up to 500 people per event and traveled to different destinations for events. Due to customer demand, the couple decided to open a brick and mortar in an area surrounded by nature.

“We wanted to have something more outdoorsy and more open,” Sergio Nuñez said.

What’s special about it?


The rustic restaurant offers an indoor dining area in a homestyle building with several roll-up doors to provide an open space combined with nature.

Solaida Nuñez said customers often comment on the restaurant’s atmosphere.

“They feel like they're at home in their backyard,” she said.

Sergio and Solaida Nuñez also said they support the local community and sponsor Conroe High School’s barbecue team.


On the menu

With recipes created by the owners, Solaida Nuñez said that due to their creativity, the restaurant can make up to eight dishes from a single choice of meat. Porky’s Belly BBQ prepares each meal upon request to offer customers freshly made barbecue cuisine.

The restaurant solely focuses on its barbecue and smoked meats because some meats can take between eight to 16 hours to cook, Solaida Nuñez said.

“When people come here, they know that they expect to wait a little bit too, because we make your meal upon request,” Solaida Nuñez said.


The menu features a variety of meats, including two different types of barbecue consisting of original brisket made with a sweeter flavor and Texas brisket, seasoned with salt and pepper.

Other meats include pulled pork, pork belly, sausage links, barbacoa, St. Louis ribs, chicken and its latest addition, dino ribs, a menu item introduced in May. Dino ribs are Texas-sized smoked beef ribs for those who desire a larger quantity of meat.

Additional menu items offered include burritos, quesadillas, baked potatoes, sandwiches, grilled cheese, nachos, tacos and a customer favorite in the loaded mac and cheese; all dishes are made with the customers’ choice of meat.

“We start preparing meats 24 hours ahead of time,” Solaida Nuñez said. “So you have to have a love and a passion for it.”
