Bland and Andra Brown opened Bubba T’s in Willis on Feb. 14, 2018. The couple began with a Cajun- and Creole-inspired restaurant in Spring, and after 8 years they expanded their vision to Willis.

“This whole concept of belly-to-belly, rolling out the red carpet, come on in, we are sitting on the curb waiting for you, just that hometown feeling, ... I love the well roundedness,” Andra said.

The restaurant features a variety of Cajun dishes, such as catfish, shrimp tacos and gumbo.

According to Bland, the best part about running their business in Willis has been submerging themselves into the Willis community by participating in fundraisers.

Andra said she refers to the Willis location as the home of the five-star reviews. “We are in it to please the community, provide atmosphere and make a difference,” Bland said. “So that’s been about 12 years now.”


In addition to serving the community, Bland said the couple seeks to promote from within for its management.

Andra said it is an opportunity to invest and mentor those within her restaurant doors. “We have had the same three chefs since we opened our first location,” Bland said.

According to Bland, Bubba T’s will continue to grow.

A new location is planned on FM 1488 in Conroe, and the restaurant is undergoing a brand refresh to no longer just feature Cajun-inspired dishes, but also show off other foods, such as burgers and chicken-fried steak.


Andra said she wants to show that Cajun food is more about seasoning than it is about spice. As a result, Bland said the eatery plans to remove the word “Cajun” from its name.

“The beautiful thing about Cajun food, if you’ve never had it before, once you come in, we will be your new favorite place,” Andra said.
