After owning and operating Carbonero in Huntsville for over a decade, Elvyn Guevara and his family decided to embark on a new adventure in Zully’s Latin American Kitchen.

“We decided that after 13 years of being in business that we wanted to concentrate on just our bread and butter of our Latin American cuisine,” Guevara said. “So, that spans from Salvadoran food to a little bit of Argentinian [and] Peruvian-style [food].”

The restaurant, located in Willis, is named after Guevara’s mom, Zuleyma.

“We were like, ‘You know, let’s just really make it an authentic restaurant for our family,’” Guevara said. “She’s the mastermind behind all the recipes and the reason why we’ve been able to be so successful.”

Co-owned by Guevara and his parents, many of the dishes on the menu at Zully’s are family recipes.


“You’re coming here, and you’re eating food that we grew up eating, that we made at our own houses and things that we’re really proud of,” Guevara said.

Having opened in December, the restaurant has sought to serve up authentic Spanish flavors and cuisines, Guevara said.

“We really want everyone to know there’s more than just Tex-Mex and Mexican food out there when it comes to Spanish culture,” Guevara said. “We really focused [on] that on our menu here.”

Zully’s offers dishes such as rotisserie chicken, fajitas and a variety of soups. The menu also includes entrees, such as tacos al carbon, which is three corn tortillas with sauteed onions, avocado slices and pico de gallo served with rice and beans.


Alongside a traditional Latin American menu, the restaurant’s decor harkens back to Spanish culture as well, Guevara said.

“A lot of the big decorations we have [are] actually from El Salvador,” Guevara said. “We went over there, and they were having an artisanal market, so we got some of their paintings on the walls. We [also] ended up framing [two decorative towels] because they cover the kitchen a little bit but [also] added a lot of vibrancy and culture to our restaurant.”

With nearly everything made to order and a focus on family, Guevara said he and his parents are setting down roots in Willis and welcome everyone to join them.

“That’s really our goal here—let [people] be a part of our Zully family now,” Guevara said.
