The eatery is named after Lymbar Drive, a street in Meyerland where Cordúa’s grandparents settled in Houston after moving to the city from Nicaragua, according to a press release. Cordua said his grandmother's house was where he was introduced to the Latin flavors on display at his new restaurant, first popularized by his father Michael Cordúa at Churrascos and Americas restaurants.
“The Lymbar is my grandmother’s house,” Cordúa said in a statement. “It’s a tribute to all grandmothers. ... The Lymbar is the distillation of our heritage.”
Cordúa is joined by executive chef Adolfo Lopez, Jr., who past credits include Brenner’s on the Bayou, Uchi and Churrascos.
The menu includes items such as the corn-smoked lamb chops on a fluffy bed of tangy couscous tabbouleh; pan-seared snapper with saffron arroz a la tumbada with chorizo emulsion; and a ground beef Kofta Burger with tzatziki.
The Lymbar also offers a selection of empanadas, including the Monte Cristo, made with smoked turkey, ham, gruyere and raspberry sesame vinaigrette. Beverages include cocktails, and wine list features options from France, Italy, Spain and South America.
