Raymond Goldsmith, a former oilfield services manager, left that career path to follow his heart and cook for people who love Louisiana-style seafood. Since September 2014, he has served up tender shrimp and flaky catfish in a food trailer at the corner of Atascocita and Pearson roads in Atascocita.

Goldsmith said he has increased Southern Style Seafood Company’s hours and doubled his catering services over the four years the restaurant has been open to meet the steady demand.

“I used to think I was the hardest worker I knew [when I worked as an oilfield services manager],” Goldsmith said. “Until I started my own business and worked for myself.”

The most popular order at this fried-seafood hub is the No. 7 combination plate, which consists of four pieces of fish, four shrimp, french fries and hush puppies, Goldsmith said. Another popular dish is the shrimp po’boy, which is a sandwich consisting of fried shrimp and coleslaw served on garlic bread, which comes with a side of french fries.

Goldsmith said he purchases all of the seafood and most other ingredients from a Houston distributor, but the bread used for the po’boy is prepared by a bakery in New Orleans.

Southern fried mushrooms, fried corn on the cob and Cowboy Bites of cream cheese, kernel corn, bacon bits and jalapeno bits deliver Southern tastes to families looking for made-from-scratch flavor derived from Goldsmith’s family recipes, he said.

“I also like to try new recipes.” Goldsmith said. “Our fish tacos are popular. The catfish is a southern Mississippi recipe with different flavors on a corn tortilla with coleslaw and spicy sauce. It’s fantastic.”

Southern Style Seafood Company is thriving as a result of curious residents who stop in to check out the food trailer’s offerings, Goldsmith said.

“From open to close, people and cars line up around the parking lot,” Goldsmith said. “If both windows are open, we’re still cooking. If one is open, you’d better hurry up.”
