The restaurant originally opened in 2004, but Casillas bought Lucy’s in 2013. Before he came along, Casillas said the restaurant had seven owners, and he credits his stalwart attitude for his longevity as the restaurant’s owner.
Long story short
Casillas is originally from the Canary Islands in Spain but immigrated to the United States in 2012.
“I came in 2010 to visit my sister-in-law,” Casillas said. “It was awesome. Being from a small island, I came here to the [United] States where everything is bigger and larger.”
He initially planned to flip homes after moving to Grapevine but said it didn’t work out. In 2013, he relocated to Celina after buying Lucy’s.
Casillas said he and his staff strive to provide a sense of community, family and hospitality, which is what sets Lucy’s apart, adding that he wants his employees to treat diners like they would treat their families.
Also of note
Lucy’s was originally named for the first owner’s dog, Casillas said, but he changed the mascot to a cow after he bought the restaurant.
Additionally, Casillas updated the website to allow online ordering, a necessity he instituted to keep the restaurant open during the pandemic.
The other big change Casillas made was adding the restaurant’s bar.
What’s on the menu?
Lucy’s menu consists of traditional comfort food. Casillas said the most popular menu item is the chicken fried steak. Other popular menu items include the hamburger and the restaurant’s selection of homemade pies. The best-selling pie, Casillas said, is the coconut cream pie, but he added that the key lime and apple pies are popular too.
