A Potbelly restaurant is slated to open in McKinney later this year, a company representative confirmed.
The sandwich shop offers a variety of toasted sandwiches as well as salads, soups, macaroni and cheese, milkshakes and more, according to the company's menu. Construction of the restaurant in a 1,967-square-foot shell space is expected to cost $450,000, according to a development filing with the Texas Department of Licensing and Regulation.
The restaurant will be a tenant in the Eldorado Neighborhood Shops development, a project by Plano-based SLX Capital that will be anchored by a Trader Joe’s store at the southwest corner of Stonebridge Drive and Eldorado Parkway in McKinney.
Potbelly officials previously announced an expansion in late 2025 with nine new restaurants slated for McKinney, Denton, Flower Mound and more North Texas cities.
