The store was originally opened by Desiree Hlavenka in 2015 and recently surpassed 10 years of operation. Jacob Honescko, who was a regular at the shop prior to the ownership change, said he and a group of investors assumed ownership in October.
The details
Honescko said he has worked in the coffee business for about five years, and he has experience roasting coffee and working in various coffee shops in the Dallas-Fort Worth area.
Owning a coffee-focused business has been a goal for him and his wife, Honescko said, noting that prior to purchasing Filtered, the couple considered starting a coffee catering brand.
In addition to his regular visits to Filtered, Honescko said he is familiar with McKinney and has family connections in the area. Honescko’s brother and sister-in-law, Joey and Ginny, own Neighbor Books on the downtown square.
What’s happening
The shop continues to offer a variety of coffee and noncoffee drinks, but Honescko said he has made incremental changes to the business and its offerings since assuming ownership.
Changes made so far include new coffee equipment, including espresso machines and grinders, as well as updated coffee providers. The shop new serves coffee from Valor Coffee and Harp and Bowl Coffee Co. The shop, which offers a variety of baked goods, also partnered with downtown McKinney business Bresnan Bread and Pastry to serve croissants, Honescko said.
“I understand that coffee shops are routines for a lot of people ... so we decided to do it in stages,” Honescko said of the changes implemented. “Most people have been very appreciative of it, and they have responded really well to it.”
Honescko said he also plans to develop new permanent signature drinks and continue offering seasonal drinks at the shop.
“My idea of craft coffee is people who take it just a little too serious, but make it fun,” he said.
Looking ahead
Honescko said he aims to continue to update offerings at the shop, with a goal to hyperlocalize products offered to be sourced from the McKinney area, such as locally sourced tea.
“I love McKinney. We really care about the space and serving this community,” he said. “I want to make this space really special.”
