Lacey and Noah Hester bought Hamm's Meat + Market in August 2023. Since then, they have created a lunch menu and hosted events, but still kept the culture of Hamm’s alive, they said. The downtown McKinney shop was originally established in 1954, according to a news release.

The overview

Hamm’s Meat + Market is a family neighborhood butcher shop that offers a variety of meats including homemade sausages, house-cured bacon, beef and salmon, Noah Hester said. The shop also has a lunch menu, and offers grab and go meals such as smoked turkey pot pies and bison ragu.

“It was really important that we were feeding the community stuff that I want to feed my children,” Lacey Hester said. “All of our food that's on the sandwiches is from our meat case, which is maybe not great for our costs, but I know where it came from. It's selected by me.”

The backstory




Lacey and Noah Hester met while he was chef and general manager of his restaurant, Blue Dragon, in Hawaii. They made the decision to move to Texas when they had children and wanted to buy their own business together. After meeting the prior owners of Hamm’s, the couple took up the opportunity because “it felt right for our family,” Lacey Hester said.

What’s on the menu?

The shop's most popular lunch item is the smash burger, Lacey Hester said, a 4-ounce brisket patty topped with sauteed onion, burger sauce and American cheese.

Another popular sandwich is the Classic Ruben which includes housemade pastrami, garlic sauerkraut, Swiss cheese, and Russian dressing on rye bread.




The steak sandwich was the first to make the menu, Noah Hester said. It features smoked tri-tip steak with brie cheese, dressed arugula, pickled onion and black garlic horseradish aioli on a ciabatta bun.

Something to note

Hamm’s Meat + Market also offers a “Supper Club” dining experience where 12 people have the opportunity to purchase tickets for a private dinner featuring an 8-10 course meal with wine pairings. The experience is “very intimate,” Lacey Hester said.

“You come in as strangers and leave as friends,” she said.
