Restaurant and bar State 28 Kitchen and Cocktails is now open in Old Town Lewisville, owner Simon Kugelstadt said.

The menu

State 28 serves craft cocktails and scratch meals using local fresh ingredients. Kugelstadt describes it as upscale bar food that ranges from chicken fried steaks and burgers to salmon and fajita dishes.

“Our chef is from New Orleans so the food has a little bit of Cajun flair,” Kugelstadt said. “We’re not a Cajun restaurant, but there’s that little flare where you know he's in the kitchen.”

On the beverage side, Kugelstadt’s team created an “espresso martini” which blends vanilla vodka with cream liqueur and cold brew coffee from The Perc Coffeehouse in Old town, he said.


The backstory

The name refers to Texas being the 28th state to join the U.S. and the restaurant Texas-themed decor is meant to reflectthat, Kugelstadt said.

Kugelstadt started the company with partners Barry Luther, David Harvey and Colin Frank, who, like him, have years of experience in the industry. Kugelstadt also said he picked a veteran team to run the bar.

“I probably have 50 years of experience behind the bar between just the three main bartenders,” he said.


The budding revitalization of Old Town, including an upcoming beer garden, has created an opportune time for restaurants opening in the area, Kugelstadt said.

“[The developments] are going to drive traffic to the area so we kinda go in early and it's been great,” he said.

The details

The restaurant will operate 11 a.m.-midnight daily, Kugelstadt said. After the grand opening, he said he plans to have Saturday and Sunday brunches that will feature live music.


The restaurant plans to hold the grand opening with a ribbon cutting ceremony the second week in August.
