A Dallas-based pizza company is coming to Colleyville.

ZaLat Pizza now has a coming soon sign at the Colleyville Town Center. According to its website, ZaLat says it's the best takeout pizza in the universe.

The details

Khanh Nguyễn, the founder of the company, said the Colleyville spot will be a little different than the other locations since it will allow limited in-store dining. He said the plan is to start renovations this fall and open in the first quarter of 2025. Nguyễn added the focus is getting a new Carrollton store open before shifting to Colleyville. ZaLat will move into a location that formerly housed RedBrick Pizza.

“With our kind of model, we have to pay attention and be mindful of the cost of opening things up,” Nguyễn said. “We basically put as much in the quality of the pizza as we can.”


Nguyễn said his brother used to live in Colleyville and it was also a town he had an interest in opening a store. This will be the 21st location in the Dallas-Fort Worth metro area and the 31st overall—all in Texas.

The seed for a pizza restaurant happened by accident, according to Nguyễn. He said he started out practicing corporate law for 12 years and then moved into tech space and then healthcare technology before selling it. Without a business to run, he said he started cooking at home more and that included his favorite dish—pho.

The backstory

A native of DaLat, Vietnam, Nguyễn opened a pho restaurant and bar named DaLat in 2012 in Dallas. A pizza place opened up next to it in 2014 and closed within a year. With an existing late-night business venture, Nguyễn took over that space and started ZaLat Pizza in 2015.


Prior to creating ZaLat Pizza, Nguyễn said he had never made a pizza in his life.

He said his business model changed from delivery to takeout and a byproduct of that became Uber Eats. He noticed the impact deliveries had on his business in terms of time and manpower while also noticing an influx of Uber in the passenger-transport business.

Nguyễn said he called Uber headquarters and officials flew in to meet with him. For six months, ZaLat Pizza was the only restaurant in the United States that had a contract with Uber to deliver food.

Nguyễn said his focus has been on pizza for nearly a decade and the menu didn’t expand to anything else until wings were added earlier this year.


“We do less and we do a really good job at it,” he said. “We have a lot of different pizza toppings that most do not have. We are hyper-concentrated on it and we are able to do a lot of variety.”

He said the focus is to scale the menu to where the chef-driven options can be duplicated at all of the locations. Nguyễn said they are currently making 1.5 million pizzas per year.

He added ZaLat uses 100% beef pepperoni, which makes the pepperoni masterclass pizza stand out compared to other pizzas.

ZaLat will rotate in different flavor profiles and the chain currently is working on incorporating Indian food and pizza, Nguyễn said. Nguyễn added past variations included spaghetti o’s and chicken and waffles.
