The modern, fast-casual eatery will feature a dining experience that combines buffet-style service with plated dishes. Cold items, including fresh dips, salads and toppings will be available buffet-style while proteins will be plated fresh from the kitchen, Merched said in an email.
“This location will serve as a prototype model for future growth opportunities, allowing us to perfect a scalable concept while delivering the same authentic Andalous flavors,” Merched said.
Backstory
Andalous Mediterranean Grill opened in Las Colinas in 2012.

The context
Andalous Fresh Mediterranean is one of three new concepts the company plans to launch.
Andalousia Hookah Café, which is slated to open in September, will be located in Richardson. The upscale cafe will offer over 30 flavors of premium hookah and Mediterranean-inspired drinks in a cozy, quiet setting, Merched said.
Andalous Mediterranean Mezza is slated to open in December in McKinney. The menu will feature plated dishes including beef tenderloin skewers, lamb chops and kababs. Hummus and salads will also be served.
The 6,500 sq. ft. restaurant will feature two tree-shaded patios and a small gated play area for children.
Andalous Mediterranean Concepts also operates Andalous Mediterranean Grill locations in Los Colinas and Arlington as well as Andalous Mediterranean Buffet in Richardson, the company website states.
