When friends Pat and Kim Murray and Seth and Katie Hensarling decided to go into business together, they knew they wanted a business centered around sweets.

“We all have big sweet teeth. … And we knew we wanted to do a business together, and we did some research,” co-owner Kim said. “And my husband and I flew up to Tennessee to try the pies [at the original Buttermilk Sky], and we loved the pies immediately.”

On April 8, 2016, the two couples opened the first Texas location of the Southern-style pie business along Colleyville Boulevard in Colleyville.

“We have a lot of pie fans in the community,” Kim said. “We opened, and we just had so many customers right away.”

The shop offers six pie flavors every day: I-40, Nanny’s Pecan, Buttermilk, Granny’s Apple, Chocolate Meringue and Coconut Cream. In addition the shop has two seasonal pies, which in May are Lemon Icebox and Fresh Strawberry. Each month it also offers a Pie It Forward flavor, the proceeds from which go toward a local charity. May’s flavor is peanut butter cream pie, and it will support Big Brothers Big Sisters.

The pies can be ordered as either a traditional large pie or mini pies.

Another option is the Cloud 9, which combines pie and ice cream.

Thumbprint cookies are also a constant menu item. They are made using the shortbread pie crust. Vanilla thumbprint cookies are available year-round, and flavors such as lemon in the spring and candy cane in the winter are seasonal.

Gift items, Buttermilk Sky Pie merchandise and small containers of Plano-based Henry’s Homemade Ice Cream are also available for sale. The shop also offers milk and coffee.

Besides word of mouth and social media, Buttermilk Sky Pie delivers a free box of pies to businesses or organizations to let people know about them through something it calls Pie to the People. A business or group can be nominated on the shop’s Facebook.

Kim said her favorite part of  the business is seeing the happiness the shop provides to its customers.

“We love what we do, and it brings us joy to bring joy to people with pie,” she said.
