David Doughie’s Bagelry will open a food truck at Lustre Pearl South in late February.

Co-owners Chef Devin and Ashley Broder have operated the Austin bagel shop out of a stand at Texas Farmers Market at Lakeline since 2022 and Texas Farmers Market at Mueller since last year. This will be their first food truck.

The new trailer will allow for expanding and introducing new menu items. There will be a variety of house-cured and smoked fish, an expanded schmear selection and a variety of hot egg sandwiches. A special menu focused on shareable bar foods like bagel chips will also be introduced.

They will stop making made-to-order sandwiches at farmers markets once the food truck opens, Devin Broder said. Guests will still be able to purchase bagged bagels and other packaged goods.
