The backstory
The pair was always interested in opening a business, but the exact type of business didn’t come to mind. That was until Hunter's culinary skills blossomed during the start of the coronavirus outbreak.
“We were at home—bored like everyone else—and we couldn't find vegan macarons anywhere around Austin, and that was one of [Evelina’s] favorite desserts,” Hunter said. “So we decided to try to make them and had a lot of trial and error. It was probably about eight or nine months before they actually came out looking like macarons.”
The couple began selling the macarons at pop-up markets shortly after. The baked goods were a hit with the community and led to the opening of the business.
On the menu
Hunter said in his 14 years of being vegan, he’s struggled to find any vegan food options in the Round Rock area. He said the bakery helps fill that hole in the community.
“One of the main things we offer are plant-based options in Round Rock, because there aren't a lot of them around here. There have been some, but they have closed, unfortunately," Hunter said. “A lot of our customers come in specifically for allergens—they are not vegan, but they have a dairy allergy, or a gluten allergy or egg allergies. So we provide them those options that they couldn't find elsewhere.”
The bakery’s menu features a wide range of cuisine from latte specials and omelets to sandwiches and salads.
“We wanted to try to make things so you can't really tell they’re plant-based, so people can enjoy whether they're vegan or not,” Hunter said.
What’s special about it?
With chandeliers floating from the ceiling, a grandfather clock and a bountiful supply of blue and white flowers covering the walls, the bakery places customers in their own “little French palace,” Evelina said. The decor is inspired by her time living in Europe. The Sextons said they wanted to create a place to remind her of home while also bringing together some of their combined interests.
Unicorniverse Bakery and Cafe also offers custom cakes and private event hosting, starting at $39 per person. Evelina said the duo can personalize the menu and make items that are not on the typical menu, but everything served is plant-based.
