The first Round Rock location of Waffle House opened in mid-December, over two years after plans for the location were announced.

Austin-based Evergreen Commercial Real Estate announced the purchase of land for the restaurant location in June 2021. The regional diner known for its waffles and burgers has three other locations in the Austin area.
