Originally from Utah, Katie Burton started working at Waffle Love in 2016 after finishing college.

The original Waffle Love opened in 2013 in Utah as a food truck where Burton worked after growing tired of being in an office.

Burton became a store manager after just a few months and later got the opportunity to franchise Waffle Love in any city she wanted. After researching areas to open a new Waffle Love she settled on Austin.

In 2017, she opened the Waffle Love food truck that travels throughout the area. She opened a brick-and-mortar location in Round Rock in March 2020 and plans to continue to grow the brand in the area.Burton said the business did well through the COVID-19 pandemic and drew many loyal customers.

“It wasn’t an ideal time to open a restaurant, but we’ve rolled with the punches of COVID and inflation over the years,” she said.


Burton said her favorite thing about Waffle Love is the staff that she works with.

“I have an incredible staff, and we’ve cultivated a hardworking and positive environment. It truly makes all the difference when you love coming to work and enjoy each other as a team,” Burton said.

The Waffle Love menu also features seasonal dishes that come out every year, she said.

“I’m a sucker for the breakfast sammy, and we have some amazing seasonal items. There’s an apple strudel coming up for Thanksgiving, as well as the jalapeno honey cornbread waffle served with brisket chili,” Burton said.


Burton said Waffle Love stands out because of the homestyle recipes, such as the customer favorite chicken and waffles, served with a special sauce and maple syrup.“These aren’t your mama’s waffles; these are authentic Belgian liege waffles made from a yeast dough and rolled in pearl sugar,” Burton said. “They are crispy on the outside, and fluffy on the inside, so don’t expect your run-of-the-mill buttermilk waffle when you come in and try us out.”

Beyond breakfast

Waffle Love in Round Rock centers around a Belgian breakfast staple and also offers dishes for every meal of the day from lunch and dinner to snacks and dessert.

1. Chicken Avocado Tartine ($13.50): A croissant waffle topped with seasoned grilled chicken, provolone, tomato, avocado, fried egg and Sammy sauce


2. The Dulce ($13.50): A churro waffle topped with faux-fried ice cream, strawberries, whipped cream and dulce de leche drizzle

3. Spicy Texan ($10.95): This specialty is offered only once a year and will return Jan. 10. It features a honey jalapeno cornbread waffle and brisket chili topped with sour cream, avocados and cilantro.
